Courgette & Raisin Muffins

This week i've been done some research to find new and interesting flavours to add to our menu. While scouring the web I came across this recipe from Annabel Karmel for Courgette & Raisin Muffins.

For those of you who don't know Annabel Karmel is the UK’s best-selling author on baby and children’s food and nutrition. She is an expert in devising tasty and nutritious meals for children without the need for parents to spend hours in the kitchen. She Has also created a popular range of healthy chilled meals for children, which are available in all major supermarkets.

Now being a mum of two myself I am always looking for ways to get my toddler princess to eat healthy so i gave these a go. The recipe is very easy to follow and uses mostly ingredients you would have in the house already with the exception of wholemeal self raising flour and possibly mixed spice. I know what your thinking Courgette? in a cake? Blurgh! But honestly its really nice and with all the spices you can hardly taste it.


I had intended to take more pictures of these but they were a big hit with my little girl and were mostly gone before they'd even had chance to cool.

Courgette & Raisin Muffins 

Ingredients 

110g white self raising flour
125g soft brown sugar
1 tsp mixed spice
1/2 tsp ground ginger
1/2 tsp baking powder
pinch of salt
110g wholemeal self raising flour
85g melted butter
180 ml milk
1 egg lightly beaten
125 g courgette, grated
125 g raisins
1 tsp demerera sugar

Method


Sieve together the white flour, sugar, mixed spice, salt and baking powder. Then sift in the brown flour and save the remaining bran in the sieve.

Melt the butter, allow to cool down and then mix with the milk and egg. Stir in the grated courgette, raisins and then the flour mixture.

Line a muffin tray with 12 paper cases.

Fill each one with the muffin mix till about 2/3 full. Mix together the reserved bran and demerera sugar and sprinkle on top of each muffin.

Preheat the oven to 170 C and bake for 25 minutes.
